These little Danish Cheese Buns are super easy to make and perhaps the quickest little buns you could ever bake. Tender in the inside and crispy on the outside, these are guaranteed crowd-pleasers.
This is our version of traditional Danish Buns (Fødselsdagsboller), revamped with a generous layer of cheese on the top to make them even more irresistible. Especially delicious served warm or with your favorite jams.
Serves 6 Danish Cheese Buns
1/2 cup (1 stick) butter melted
1 cup almond milk
30 g fresh yeast (can be replace with 2 tbsp of dry yeast)
3 cups flour
1 tsp salt
1 tsp sugar
1 egg
1 egg
Parmesan
Swiss cheese
1. Melt butter in a sauce pan over medium heat.
2. Pour the hot butter and almond milk in a large mixing bowl. Stir the yeast in the lukewarm mixture and let it rest for 2 minutes until completely liquefied.
3. When the yeast has liquefied, pour in the flour along with salt, sugar and the egg.
4. Mix the liquids into the flour using a spatula, pressing firming to form a dough.
5. Turn the dough out onto working surface. The dough should be soft and sticky. Let it rest for 2 to 3 minutes.
6. Start kneading by lifting the near edge of the dough and flip the dough over onto itself. Repeat the process for 5 minutes. If the dough remains too sticky, knead in a sprinkling of flour.
7. Place the dough back in the mixing bowl. Cover with a large plate then top with a folded towel. Let it rest for 1 hour in a warm room (at this stage, if you are not in a hurry, you also have the choice to let the dough rest overnight, for extra fluffy buns).
8. After an hour, the dough should have doubled in size.
9. Turn the dough out onto working surface and gently roll the dough into a baguette style.
10. Making clean cuts with a large knife, divide the dough into 6 equal pieces, gently shaping them into round buns. Place them on a baking tray with baking paper.
11. Place a glass in the middle of the baking tray and cover the baking tray with a clean tea towel.
12. Let the buns rest for another hour, in a warm room.
13. Turn on the oven to 400 F (205C).
14. Whisk vigorously an egg until well combined and very smooth.
15. Brush on top of each buns, then top generously with grated Swiss cheese and parmesan.
16. Bake for 30 minutes at 400F (205C).
