With Cherry Tomatoes, Ham & Goat Cheese
This Focaccia bread recipe is so easy to make, comes together in just a few hours, doesn’t require to have any special baker skills and is incredibly satisfying. Tender, fluffy and super moist, what’s fun about this bread recipe is that it is so versatile. Make your own version with different herbs, toppings, use any leftovers for sandwiches or make homemade croutons for salads.
Serves 6
4 cups all purpose flour or bread flour
2 tsp instant yeast (one sachet)
1/4 tsp sea salt
2 cups lukewarm water
1 tbsp butter for greasing
2 tbsp olive oil plus extra
Flaky salt or coarse salt
Fresh rosemary
10 cherry tomatoes, halved
1/4 cup red onion, sliced thinly
5 slices French ham
Goat cheese
6 Basil leaves
1. In a large bowl, mix together flour, yeast and sea salt.
2. Add lukewarm water (be careful not to add hot water, it would cancel the yeast action), then mix with a wooden spoon. The dough should be wet and sticky.
3. Slick the surface of the dough with olive oil (this will ensure the dough doesn’t dry out and form a crust), then cover the bowl with a kitchen towel.
4. Place in fridge to rise at best overnight, for about 12 to 18 hours (if you are in a rush, a minimum of 6 hours will do the job).
6. First, grease with butter a cast-iron skillet or rimmed sheet pan.
7. Place a piece of parchment paper, then grease again but this time, brush 2 tbsp olive oil using a kitchen brush.
8. Use a fork or a bowl scraper to transfer the dough on the greased cast-iron skillet.
9. Stretch the dough to the corners and fill the whole surface of the skillet.
10. Cover with a kitchen towel, and let the dough rest 2-3h at room temperature. This will depend on the temperature of your room, the warmer the better.
11. Add a dash of olive oil, then press your fingers into the dough, going almost through the dough. Repeat the process a couple of times to get a generous amount of dimples.
12. Add flaky salt, halved cherry tomatoes and rosemary leaves all over the top.
14. Preheat the oven to 450F (230C), and let the dough rest the time for the oven to be warm enough, no more than 10 minutes. You should see bubbles forming.
14. Bake for 25-30 minutes or until the top crust is nicely golden.
15. Once cooked, add ham, fresh cherry tomatoes, sprinkle some goat cheese and top it with fresh basil leaves.
