Non Dairy French Toast

  with Cherry Syrup and Ice Cream

This cleaned-up version of French toast is incredibly comforting and fulfilling, but not as heavy as the traditional recipe. Naturally sweet with a mellow nutty flavor, Tiger nut milk is an incredible non dairy substitute for those who wants to reduce their sugar intake without too much sacrifice on taste. That’s right, there is only a teaspoon of maple syrup added to these French toasts and you won’t even notice it. The thing truly authentic about this recipe is actually its purpose, Pain Perdu of its original name was invented to give a second life to stale bread. Served them with warm cherry syrup topped homemade tiger nut ice cream. 

Ingredients

Serves 6 French Toasts 

For the Homemade Tiger Nut Milk

1 cup tiger nuts, raw
2 cups water

For the French Toast

6 pieces of stale bread
1/2 cup tiger nut milk
1 tsp maple syrup 
1 tsp vanilla extract 
1 egg
Coconut oil for cooking

For the topping

15-20 cherries, pitted and halved
1 tbsp maple syrup
The juice of 1/2 a lemon 
Homemade Tiger nut ice cream

Directions 

How to make Tiger Nuts Milk 

1. Place 1 cup of tiger nuts in a large bowl with 2 cups of water and let them soak for 6-12 hours (at best overnight) in the fridge. 

2. Place tiger nuts in a high speed blender with its water (don’t drain them, just reuse the water they’ve been soaked into). Blend the mixture on high for 1-2 minutes, until creamy and smooth.

3. Add more water if the mixture is too dry and sticks to the sides.  

4. Pour the mixture through a fine mesh sieve lined with kitchen towel, into a bowl. Using your hands, squeeze out as much milk as possible. 

5. Refrigerate the tiger nuts milk for up to 3 days. Don’t discard the fibrous part leftover. Spread it evenly over a baking tray and let it dry on a warm spot in your home for a day or two. Once it’s dry, you’ll have tiger nuts flour ready for use. Try this Low Carb Tiger Nut Crackers recipe

How to make Cherry Syrup 

1. Place cherries, maple syrup and lemon juice in a small saucepan over medium heat. Stir, cover and bring it to a simmer.

2. Remove the cover, lower the heat to low, and let simmer for 8-10 minutes, the time to prepare French toast.  

How to make French Toast 

1. In a mixing bowl, add egg and beat it for a minute until completely homogeneous and liquid. 

2. Add tiger nut milk, maple syrup and vanilla extract. Combine well. 

3. Soak your pieces of bread into the egg/milk mixture, pressing on top to help the bread absorb the liquid.

4. Melt a tablespoon of coconut oil into a fry pan, and sear bread on each side until well colored. 

5. Serve the French toast with cherry syrup and ice cream.
