These Apple Cider Pulled Pork Tacos are our favorite kind of recipe- flavorful sauce, meltingly tender pork, and very little effort. Cooked very slowly for 4 hours, these tacos surely require a little bit of patience, but what a treat once it’s ready! We added a few key ingredients (turmeric, paprika, cumin, curry, chili) to give it just the right amount of spice, and transformed this Mexican classic into a Southern American BBQ style tacos.
Serves 12 Tacos
1.5 lb pork shoulder
1/2 cup tomato sauce
1/3 cup coconut sugar (can be replaced with brown sugar)
1.5 tsp paprika
1.5 tsp cumin
1.5 tsp curry
1.5 tsp garlic, freshly grated
1.5 chili flakes
1.5 tsp turmeric root, grated
A pinch of salt and pepper
1 bottle Apple Cider
1 onion, chopped
5 cloves of garlic, crushed
1 half red cabbage
1 romaine lettuce heart
4 medium carrots
2 apples
1 tbsp balsamic vinegar
3 tbsp olive oil
A pinch of salt and pepper
Tortillas, small size
1. In a large mixing bowl, combine tomato sauce, sugar, paprika, cumin, curry, garlic, chili flakes, turmeric, salt and pepper.
2. Cut the pork into small pieces and add them to the sauce. Mix well, then let it marinade for at least an hour, wrapped in the fridge.
3. Chopped roughly the onion and crushed the cloves of garlic.
4. Place onion, garlic, pork marinated with the sauce and the entire bottle of cider into a dutch oven or slow cooker.
5. Bring it to a gentle boil, cover and let it cook on the lowest heat for 4 hours. The pork should become very tender and fall apart easily.
6. When it’s ready, shred the pork with the help of two forks and add a few tablespoons of the sauce to moist it.
7. Reserve the rest of the sauce.
1. Wash carrots, lettuce and red cabbage.
2. With a vegetable peeler, shave the carrots lengthwise into long, wide strips. Overlapping a few strips of carrots at the same time, slice them into thin sticks, using a large knife.
3. Repeat the same process with the apples.
4. Stack the lettuce leaves together and slices them into thin layers.
5. Slices the red cabbage into thin layers.
6. Place the salad-mix into a mixing bowl, add the olive oil, balsamic vinegar, salt and pepper. Mix well.
7. Place your warm tortilla on a plate, add the pork, salad-mix on the top and little sauce, roll up and enjoy.
