with Avocado, Cherry Tomatoes & Goat Cheese
Forget sweet breakfast, this California Omelette is your new favorite way to eat eggs in the morning (or noon or evening, for that matter). Not only it is delicious and really simple to make, but the great thing about starting your day with a savory meal is that you’ll feel satisfied for longer and will have more energy by providing enough proteins, fibers and fat to your body. All you need is four ingredients (eggs, avocado, cherry tomatoes and goat cheese) and a hot pan. Serve this with a salad simply seasoned with olive oil and vinegar.
Serves 1
2 large eggs
1/4 avocado
2 cherry tomatoes, halved
1/4 cup goat cheese
Olive oil
Salt and pepper
1. Crack eggs into a medium bowl. Add salt and pepper and whisk with a fork for a few seconds.
2. Add pieces of avocado, cherry tomatoes and goat cheese and combine until all is well coated with eggs.
3. Place a small skillet (preferably stainless steel or carbon steel) over medium-high heat. Wait for your pan to be hot enough. To check if your pan is at temperature, add a teaspoon of water, if it forms large bubbles on the surface of the skillet, your pan is ready.
4. Add a teaspoon or so of olive oil (not too much), then swirl your pan for the oil to cover the entire surface.
5. Pour in the egg-avocado-tomato-cheese mixture and reduce heat to medium.
6. Cook, without moving, until almost set for 2-3 minutes.
7. Using a spatula, fold half of the omelet over and let cook for another minute making sure any egg slightly loose on top is cooking.
8. Slide the omelet onto a plate. It’s ready just as it is or, serve this with a salad simply seasoned, and garnished with some more avocado, tomatoes and goat cheese. Your choice.
