Most winter soups are ideal to enjoy for lunch or dinner but this Creamy Walnut and Butternut Squash Soup, in particular, is highly recommended if you are looking for a sleep-friendly meal. Nourishing, soothing and easy to digest, this soup is just the perfect combination. With superfood butternut squash and sleep-hormone enhancer walnut, you might be surprised how good you will feel after just a bowl. Ready in less than 30 minutes, there won’t be any excuse not to try it.
2 tbsp olive oil
1 onion, medium size, chopped
2 garlic cloves, chopped
1 butternut squash, medium size
1 cube of chicken stock (or vegetable stock )
4 cups of boiling water
1/2 cup of heavy cream
1/2 cup walnuts
Salt and pepper
1. Place a large pot or dutch oven over medium heat, and add olive oil, the chopped onion and garlic. Sauté for about 3-5 minutes or until the onions start to brown.
2. Meanwhile, peel and cut the butternut squash into small cubes, then add them to the pot. Stir well and let it cook for another minute.
3. Cut the cube of chicken stock in order to crush it. Add it to the pot with 4 cups of boiling water.
4. Add the heavy cream, salt and pepper and stir well to combine.
5. Bring to a simmer over medium-high heat, then turn the heat down to low, cover and let it cook for about 20 minutes.
6. Remove from the heat and add the walnuts.
7. Using an immersion blender, blend the whole until smooth and creamy. Season to taste before serving.
