We love these bite-sized appetizers so much that we thought about making them extra special for New Year’s Eve, adding fresh herbs, fluffiness and a delicate topping. Easy, soft and undeniable delicious, these homemade blinis won’t last for long on your table. Be quick to grab one.
Serves about a dozen blinis
1/2 cup + 3 tbsp all purpose flour
Salt and pepper
2 tsp baking powder
1 tsp brown sugar
1 egg
2/3 cup milk
2 tbsp butter, melted
Freshly chopped dill and chives
Vegetable oil
2 tbsp mascarpone
1 tbsp philadelphia
Salt and pepper
2 tbsp lemon juice, freshly squeezed

1. In a large bowl, mix flour, salt, pepper, baking powder and sugar.
2. Add the egg and 1/3 cup of milk. Combine until smooth.
3. Add the other 1/3 cup of milk, melted butter and freshly chopped herbs. Let it rest for 30 minutes.
4. Place a non stick flat pan on the stove over medium heat. Rub about a teaspoon of vegetable oil on the surface of the pan using a paper towel.
5. Drop the batter into the hot pan, 1 teaspoon at a time. Cook over medium-low heat on each side for about a minute. Then repeat until all batter is used.
6. Mix all the creamy topping ingredients.
Serve with creamy topping, smoked salmon or caviar.
