Madeleines, these yummy soft mini sponge cakes that warm the heart of anyone trying them, are actually a former member of French culture. Just like la baguette, cheese and wine, in France La Madeleine is the holy grail from six to sixty. You can find heaps of Madeleine recipes on the Internet, but this French version is healthier and super light. We replaced the butter with vegetable oil and the traditional cow milk with almond milk.
Serves 36 madeleines
2½ cups all-purpose flour
A pinch of salt
1/3 cup white granulated sugar
1/3 cup coconut sugar
4 eggs
3 tsp baking powder
1 sachet Vanilla sugar (can be replaced by 1tsp vanilla extract)
3/4 cup vegetable oil
3/4 cup almond milk
The zest of one lemon (carefully avoid the bitter white part beneath the lemon peel)
1. Preheat the oven to 375F (200C).
2. Lightly grease a madeleine plaque pan with canola oil using a pastry brush and set aside.
3. In large bowl, place flour, salt, sugars, eggs, baking powder, vanilla sugar (or vanilla extract), vegetable oil, almond milk and the zest of one lemon. Mix well until everything is combined without lumps.
4. Place the batter covered in the fridge for approximatively 10 minutes.
5. Before filling the madeleine plaque pan, give a good mix.
6. Bake in the middle of the oven for 10 minutes.
7. Remove from oven.
9. With the help of a teaspoon, remove each madeleine and let them cool.
8. Grease again the plaque and repeat until all batter is used.
Best enjoy alone or with Nutella and a cup of tea.
