You don’t need an expensive ice cream machine to enjoy making ice cream at home, unless you’re making it out of tiger nut milk. The starchiness of tiger nuts makes it a great thickening agent ideal for low calorie and non dairy ice cream. Another advantage is tiger nut milk’s sweet and nutty taste – there is no need to add refined sugar into your ice cream. Blend with dates and your ice cream will have an exceptionally creamy texture. Serve with shredded dark chocolate for extra yumminess or with Tiger Nut Milk French Toast.
Serves 5 ice cream balls
1/2 cup tiger nut milk (how to make it here)
1 vanilla bean (or vanilla extract)
1 cup coconut cream, cold
1/3 cup dates, pitted and ideally soft
1. Place a stainless steel bowl and whisk in the freezer and keep the coconut cream into the fridge the time to prepare the custard.
2. Add tiger nut milk with vanilla bean in a small saucepan, heat it over low-medium heat constantly stirring until it thicken like a custard for about 5-10 minutes.
3. Once it’s thickened, transfer it quickly to a large bowl. Let the custard cool in an ice bath for about 10 minutes, giving it a gentle stir every so often.
4. Place dates into a blend and blend until smooth.
5. When the thickened tiger nut milk has cooled, remove the vanilla bean and place custard with date paste. Blend until smooth.
6. Remove stainless steel bowl and whisk from freezer. Add cold coconut cream, and whip the cream until smooth, creamy and soft peak formed.
7. Fold a few spoonfuls of the custard into the whipped coconut cream.Gradually add the rest of the custard, being careful to not knock the air out.
8. Place bowl with ice cream into the freezer. After 40 minutes give it a good stir using a spatula, repeat 3 times for the best result.
9. Transfer tiger nut ice cream into an air tight container and store it in freezer ready to enjoy.
