Simply prepared cod fish with comforting and mouth-watering side dishes makes the kind of satisfying meal that’s almost too healthy to be true. Flaky fish can be tricky to cook, but our easy method of cooking over a bed of lemon slices will ensure a smooth and successful weeknight-friendly preparation.
Serves 2
1 Fresh Cod fillet cut in half
2 fresh lemons
1 tbsp Olive oil
Fresh dill
Salt and pepper
4 gold potatoes, medium size
1 onion
1 tbsp fresh ginger, grated
2 tbsp butter
1/2 cup milk, warm
Salt and pepper
1 bunch fresh asparagus
2 tbsp olive oil
Salt and pepper
1. Preheat the oven to 400F (205C)
2. Wash the asparagus and cut the ends.
3. Place the asparagus on a baking pan with baking paper and drizzle with 2 tablespoons of olive oil, just enough to lightly coat the asparagus.
4. Add salt and pepper and arrange the spears in a single layer on the baking pan.
5. Bake for 25-30 minutes at 400F (205C), flipping halfway through.
1. Peel and cut the potatoes in small pieces
2. Place them on a steamer basket and steam until tender when pierced with the tip of a paring knife, 20-25 minutes.
3. Meanwhile, peel and chop the onion thinly.
4. In a small sauté pan, over medium heat, add a dash of olive oil, the chopped onion, grated ginger and a pinch of salt. Let it cook for about 10 minutes until they begin to brown.
5. Place the onion in a mixing bowl with butter, and set aside until ready to use.
6. Once the potatoes are cooked, add them to the mixing bowl, wait a few minutes until the butter melts then, smash everything together using a masher.
7. Add the warm milk, salt and pepper, and combine well using a wooden spoon.
8. Set aside covered to keep it warm.
1. Thinly slice the lemons.
2. Season the fish fillets and add fresh dill on the top.
3. Place a large sauté pan over high-medium heat.
4. Add olive oil in the hot pan, make a bed of lemon the size of your fillets, overlapping the slices of lemon. Place the cod fillets on the top of each lemon bed and cover the pan with the lid.
5. Let it cook over medium heat for 10 minutes with the lid on. No need to flip the fish or do anything, after 10 minutes, the fish should be perfectly cooked.
