This Romano bean salad is super refreshing and the crispness of the croutons hits the spot if you miss the crunch of a naughty snack. Pack in fibre and quality proteins, this summer salad will keep you feeling satiated for longer periods of time. You only need 5 ingredients to complete this recipe. And the good news is if you don’t have any bread or feta in your pantry, no worries! You can go ahead and still treat yourself.
Serves 2
1 pound Romano beans
15 cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1-2 slices of stale bread (fresh bread works great as well)
Feta cheese
3 tbsp olive oil
1/2 tbsp balsamic vinegar
Salt and pepper
1. Add about one-inch of water to a pot that has a fitted steamer basket or can hold a steamer insert. Bring it to a boil. (I like to add a pinch of salt with a pinch of baking soda).
2. Trim and cut Romano beans into 2 inches pieces and place them into a steamer basket. Cover pot.
3. Steam until the Romano beans are tender, about 25-30 minutes on low-medium heat. (5 minutes if you are using a pressure cooker).
4. Meanwhile, place into a mixing bowl halved cherry tomatoes, sliced red onion.
5. Add olive oil, balsamic vinegar, salt and pepper. Combine well and let the tomatoes release their juice.
6. Cut some stale bread that you have left into small cubes.
7. Add a tablespoon of olive oil to a frying pan placed over medium heat.
8. Add bread, stir to coat most of the pieces and cook until the edges of bread have a nice golden color. Stir often to make sure bread doesn’t burn, it goes very quickly, about a minute or 2. Remove the pan from the heat once ready and let the bread cool down for a few minutes.
9. Place steamed Romano beans into a plate well spread to cool down for a few minutes (I like to place them next to an open window or outside to bring down their temperature faster).
10. Add Romano beans (warm or completely cool down, up to you!) to the mixing bowl with tomatoes and gently combine until all beans are well coated with the dressing.
11. When ready to be served, add the croutons and feta cheese crumble on the top.
