A great way to enjoy leftover ricotta cheese is to make a Ricotta Toast. With the natural freshness of cherry tomatoes and basil, marinated in sweet balsamic dressing, this is a terrific breakfast or lunch recipe. Ready in no time and so satisfying. You might even make a second one just for the pleasure.
Serves 1 toast
1 slice of country bread
4 cherry tomatoes, halved
1 tbsp olive oil
1 tsp balsamic vinegar
Salt and pepper
2 to 3 tablespoons ricotta cheese (recipe here)
Basil, fresh leaves
1. Toast the bread, just enough to crunch when you bite into it.
2. Meanwhile marinate halves cherry tomatoes with olive oil, balsamic vinegar, salt and pepper for a few minutes.
3. Flake the ricotta on the toast.
4. Add marinated tomatoes with dressing on top.
5. Garnish with a few basil leaves.
